I thought this was kind of an innovative idea.

Chipotle is using junk mail to make a point about the healthiness of their food and to do some philanthropic good. They call it the "No Junk" campaign (http://www.marketingvox.com/junk-e-mail-gets-a-second-life-047239/?utm_campaign=newsletter&utm_source=mv&utm_medium=textlink).

I think it's kind of cool. I'll probably send my junk mail there.

That is a cool idea. Turning something negative into a positive and reinforcing their main brand message in the process. All good stuff for Chipotle as well as the schools who profit from the collection of the junk mail.

Do you know what constitutes junk mail in this context? Is it any mail trying to advertise or sell us something or does it have to be a specific kind?

From what I've read, and I also read their press release on the program, junk mail seems to be whatever you think is junk mail. They also say they will not be capturing e-mail addresses.

Cool Sounds like a really good program for all concerned. I'll have to start saving my junk mail to send it to them.
